Hi Karen and Mark... Im slowly getting my act together wrt menus etc... Fancy a green chicken curry, Spiced Morroccan chicken, roast vegetables and cous cous, wild mushroom rissotto, Lamb in Red wine with rice. ... you name it, I can create it!!!!
Rhubarb leather, Kiwi leather, spiced apple leather...

Wow that sounds great, I love rissotto, I create one myself using Risoni, Tumeric, dried garlic and onion, some dried peas and mushroom also some Biltong salt and peper oh and some dried chilli. Its pretty good on a cold night. looking forward to your menu's. Also do you have a dehydrator I have seen one in Harvey Norman at a good price so maybe I need to invest in one. I have heard they make a lot of noise have to be in dust free area and run for a long time??? dont know much about them.

I use a smaoll dehydrator with about 8 round shelves. It does the job. I also vacuum pack individual meals. Dehydrating can get overengineered just like everything else. I put mine in the childrens bathroom as the fan is annoying rather than really noisy. Dust free??? If you load correctly and have small pieces/thin slices it takes about 12 hours... depends on what you are dryiing. Experimenting is fun, I have had no disasters, yet.
Sharing a dehydrator is a good way to go.. you dont need it that often. I keep all dried stuff in the freezer as pantry moths LOVE it.................

Hi Karen,

Conga rats on the dehydrator.... pretty much any recipe works.... you just have to have no or as little as possible fat, otherwise it is inclined to go rancid.. Not a great discovery out in the middle of nowhere with no altenate food supply.

I use chicke/beef/turkey/whatever mince rather than chunks. It dries out faster and rehydrates faster too. Most important when you are cold and starving out in the boonies.

I also go for plenty of spice... bland is soooo boring. I also cook then dehydrate rice. That means it only needs rehydrating, not cooking. That means less fuel to carry.
